This week’s Sunday Random Recipe, where I chuck together superfoods to get me through the busy week. Today was a win, so you get to share in my kitchen success! Goji berries and blueberries with ground up Brazil nuts (best protein powder you can get – with none of the usual nasties in that our bodies can’t digest! And the added benefit of selenium to reduce stress).
Handful of Goji berries
Small handful of cacao nibs
Dash of Stevia
Half cup of blueberries
1 tablespoon of chia seeds
2 cups of almond meal
1 cup LSA mix
1 cup Brazil nuts, ground into powder
1 tablespoon maca or cacao powder
(Could also add some cranberries)
Ground the Brazil nuts (I used a meat clever-thingy and then blended it until powdery), mix with the almond meal, butter and eggs. Add all of the other ingredients, squeeze tightly into balls and bake on baking paper in the oven until they get a golden tinge (about 15 minutes)
What all that is good for….
Cacao (raw chocolate) – full of antioxidants & magnesium – essential nutrient for reduces tension and stress in the body, boosting mood and staving off depression while protecting heart health. Calcium, iron and fibre are further benefits. It’s healthy chocolate…what more can I say? Except eat it in moderation still!!
Maca – vitamin B12 (great for brain health) and protein. B1 and B2 come to the party with Maca as well, and vitamin C and E. Calcium, zinc, iron and magnesium are also bountiful in this root. It helps to balance hormones, boost fertility & improve libido and endurance. Energy levels and mood may also get a pep up from this powder. For more benefits, see here.
Brazil nut protein powder – protein powders that you get off the shelf are full of processed junk that is likely to bulk you up while destroying your internal organs. If you look good on the outside what does it matter if your insides are rotting away right? Wrong. You won’t look good in the outside for long, nutrients have beauty effects, what goes into your body shows through to the skin. And who likes that bulked up, unnatural look anyway? Not me! Brazil nuts will give you that energy boost you are looking for…with more protein than your packaged powders! Plus the added benefits of selenium, a wonder “drug” that will reduce anxiety and boost mood and general health.
Whole eggs – are a great source of protein and good fats.
Almond meal – almonds are another “superfood” packed with nutrients such as vitamin E, manganese and magnesium, and full of antioxidants. Now to be honest with y’all, some people believe that heating almond meal is dangerous due to oxidisation. Other folks believe that the antioxidants in a balanced diet (and in the other ingredients in these Superballs in fact!) would counteract the free radicals produced by heating unstable almonds. To be honest, I don’t eat enough of these “snacks” for it to be an issue and I would recommend you do the same. Stick to majority whole, raw foods and moderation healthy snacks to keep you sane and satisfied. Google it, do your own research and make up your own beautiful mind. Never blindly accept what you read in a blog. Even my blog. Although I will always endeavour to give you two sides of a story if I know they exist. Goji berries – another superfood that touts the honorary label of “most nutrient dense fruit on earth”. They are full of powerful antioxidants and packed with vitamin A.
Blueberries – another food powerhouse, blueberries rank highest in antioxidant power of all fruits and vegetables. Also good for boosting memory and energy levels.
LSA mix – linseed, sunflower and almond flour has anti-inflammatory properties and a good source of vitamin E. It is a great way to get your healthy fats and balance omega 6 with 3.
Chia seeds – also awesome for balancing omegas, the average diet is high in 6 and needs more 3 to balance it out to a healthy level.
