healthy shortbread recipe – say what?!

Yeah yeah it’s healthy – just don’t go crazy alright? It’s still a “sometimes” food. But if you wanted to eat it for breakfast on Christmas you’d be happy to know that it is refined sugar-free, dairy-free, gluten-free…basically cancer free 😉

Only a few ingredients and simple to make.

1 cup of coconut flour
1 cup of almond meal
4 tbsp of molasses liquid
1 tbsp of organic local honey
Pinch of Himalayan pink salt
1/2 cup of coconut oil, melted

Mix all ingredients into a blender EXCEPT almond meal. Blend and pulse until mixture is crumbly.

Spread the almond meal over the bench to dust the mixture in. You can use coconut flour but the almond meal gives the cookie a multicoloured coat which is kinda cool. Spread the mixture and press into the bench with a rolling pin. Cut dough into shapes. I added goji berry buttons and cacao nib eyes. They kinda looked creepy to be honest.

Add to oiled baking paper and bake until golden brown at 180 degrees. Don’t do what I did and get caught up writing this blog post, I just snapped out of my writing reverie to the smell of burning little shortbread men. Dang!

They were a little too tan (too tan? Is that even a thing. I wouldn’t mind having that problem) but still tasted amazing so just think how great they’ll be when you concentrate on your baking!
