I created a raw, clean cheesecake-type of dessert for Mumma’s birthday. I did individual serves but I’ve done something similar as a bigger cake (I say “similar” coz I never really know what I’m putting into my “kitchen adventures” except that it will be clean and nutritious.
Here goes…Blend a cup of dates with some walnuts, macadamias, almonds and half a cup of water. Add to a bowl with a cup of shredded coconut, and a handful of sunflower and pumpkin seeds. Heat some coconut oil with a teaspoon of honey and mix with the dry ingredients. Press firmly into patty pans in a muffin tin.
Blend a punnet of raspberries with a jar of coconut yoghurt, two tablespoons of chia seeds and some shredded coconut.
Freeze and served chilled or at room temperature drizzled with maple syrup.
