Paleo Organ Meatloaf: low-FODMAP, autoimmune-friendly, nutrient-dense goodness

Heart and kidney meatloaf with liver gravy. You can’t get more nutrient-dense than this baby served with a mountain of green leafy veg and puréed pumpkin. Simply amazing.

This was inspired by the incredibly dedicated and amazingly intelligent Sarah, The Paleo Mom.

My Ingredients were:
500g minced veal
300g minced turkey
200g beef kidney – blended
200g beef heart – blended
2 stalks celery
1 medium carrot grated
50g pork lard fat (or cold pressed extra virgin coconut oil)
¼ cup fresh parsley
3 Tbsp fresh basil
3 Tbsp fresh oregano
1 Tbsp fresh thyme
1 Tbsp fresh chives
½ tsp Pepper
1 Tbsp Blackstrap Molasses
3 Tbsp Apple Cider Vinegar

The Paleo Mom also mentions this option but I left this out as well as some of the higher FODMAP ingredients like garlic: either ¼ cup Flaxseed Meal or 2 eggs (for a denser loaf)

I kinda just chuck all the ingredients together and let it bake in its tasty juices but you can check out The Paleo Mom’s instructions.

I made the liver gravy with a heap of chicken livers blended with bone broth, basil leaves and some molasses.
