We need carbs when we are ill, the body needs energy to heal. So this little clean and healthy ice-cream is perfect to soothe the throat with its cool texture and a massive boost of vitamin C from the potent source of camu camu powder.
Blend up a small can of BPA-free coconut milk (source one without emulsifiers or gums if possible) with one mango, a tablespoon of camu camu powder and a banana. That’s it. Seriously.
Freeze or keep it in the fridge – either is fine!
Other good vitamin C whole food sources are thyme and parsley – I usually boil these to make a herbal tea. Kiwi fruit, peppers, green leafy veg, broccoli, oranges and strawberries are all potent vitamin C foods.
